Easy Migas
A simple meal perfect for breakfast, lunch, or dinner.
Ingredients
  • ½ - 1 jalapeno, seeds and membranes removed and finely diced
  • 2-3 tomatoes, chopped
  • 1 green pepper, chopped
  • 1 onion, chopped
  • 12 eggs
  • ¼ cup water
  • ½ teaspoon salt
  • 1 cup shredded cheddar or colby jack cheese
  • 2 tablespoons oil + 2 teaspoons oil
  • 1 cup crushed tortilla chips
Instructions
  1. In a bowl whisk together egg and ¼ cup water.
  2. Heat oil in a skillet or pan.
  3. Add jalapeno pepper, green pepper, and onion to pan. Cook until tender and slightly browned.
  4. Add tomatoes and stir. Cook for 1-2 minutes.
  5. Reduce heat to medium-low and pour in egg mixture.
  6. Stir gently folding in ingredients while cooking the eggs.
  7. When eggs are cooked stir in cheese and crushed chips.
  8. Serve.
