Chocolate Chip Pumpkin Bars
Chocolate chips and pumpkin go together so well in this easy pumpkin dessert.
  • 2 cups flour ( I used Bob's Red Mill 1 to 1 gluten free flour blend)
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup butter, softened to room temperature
  • 1¼ cups sugar
  • 1 egg
  • 2 teaspoons vanilla
  • 1 cup canned pumpkin puree
  • 1- 12 ounce package semi sweet chocolate chips
  1. Preheat oven to 350 degrees.
  2. Grease a 9x13 pan and set aside.
  3. In a bowl mix together flour, cinnamon, baking soda, and salt. Set aside.
  4. Cream butter and sugar until smooth.
  5. Add egg and vanilla and mix until combined.
  6. Add in pumpkin. Mixture may appear curdled, but it is fine.
  7. Slowly mix in dry ingredients just until combined.
  8. Fold in chocolate chips.
  9. Bake for 35-40 minutes.
  10. Cool and cut into squares.
  11. If you would like to be able to easily remove these from the pan and cut into prettier squares line the pan with parchment paper before spreading the batter into the pan. Bake and let cool completely. Life cake from pan and cut into squares..
