Southern Living Buttermilk Cornbread
A simple southern style cornbread.
  • 2 tablespoons oil, shortening, or bacon grease
  • 1 cup yellow or white cornmeal ( I use gluten free cornmeal)
  • 1 tablespoon flour ( I used a gf flour blend)
  • 1½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1/ 4 teaspoon salt
  • 1 cup buttermilk
  • 1 egg
  1. Preheat oven to 450 degrees.
  2. Place oil in an 8 inch cast iron pan and place pan in the oven to heat.
  3. While pan is heating combine cornmeal, flour, baking powder, baking soda, and salt in a bowl. Set aside.
  4. In another bowl combine butter milk and egg. Pour over cornmeal mixture and stir just until moistened.
  5. Pour batter into hot cast iron pan.
  6. Bake for 20 minutes or until cornbread is done and golden brown on top.
