Gluten Free Chocolate Chip Coffee Cake
Gluten free chocolate chip coffee cake is so good that no one will know that it is gluten free.
Ingredients
  • Cake
  • ¾ cup rice flour
  • ¼ cup and 2 tablespoons sweet rice flour
  • ¼ cup and 2 tablespoons corn starch
  • ½ teaspoons xanthan gum
  • ¾ cup sugar
  • 2½ teaspoons baking powder
  • ¼ teaspoons salt
  • ¼ cup oil
  • ¾ cup milk
  • 1 egg
  • ¾ cup gluten free chocolate chips
  • Topping
  • ¾ cup brown sugar
  • 3 tablespoons butter, melted
  • ½ cup gluten free chocolate chips
Instructions
  1. Preheat oven to 375.
  2. Grease an 8 by 8 pan and set aside.
  3. By hand, mix flour, sugar, baking powder, salt, and chocolate chips.
  4. In a two cup measuring cup, mix milk, egg, and oil.
  5. Pour into flour mixture and mix until combined.
  6. Spread batter into pan.
  7. In a small bowl melt the butter and let it cool for 3 to 5 minutes.
  8. Stir the brown sugar into the butter.
  9. Stir in the chocolate chips.
  10. Sprinkle the topping on top of the batter in the pan.
  11. Bake for 25 to 30 minutes.
