Gluten Free Chocolate Mayonnaise Cake
Gluten Free Chocolate Mayonnaise Cake is a gluten free cake that is so good no one will know it is gluten free!
  • 1 cup white rice flour
  • ½ cup sweet rice flour
  • ½ cup cornstarch
  • 1 teaspoon xanthan gum
  • ⅔ cup unsweetened baking cocoa
  • 1¼ teaspoons baking soda
  • ¼ teaspoon baking powder
  • 3 eggs
  • 1⅔ cups sugar
  • 1 teaspoon vanilla extract
  • 1 cup mayonnaise
  • 1⅓ cups water
  1. Preheat oven to 350 degrees.
  2. Grease and flour 2- 9 inch round pans. Set aside.
  3. In a medium bowl combine rice flours, cornstarch, xanthan gum, cocoa, baking soda, and baking powder. Set aside.
  4. In a bowl using a mixer, beat eggs, sugar, and vanilla until well combined. About 3 minutes.
  5. Beat in mayonnaise.
  6. Add ⅓ of the flour mixture. Mix just until combined. Add half of the water and mix just until combined. Add remaining and flour alternating between flour and water. End with flour mixture.
  7. Spread batter evenly between the two prepared pans.
  8. Bake for 30 minutes or until toothpick inserted into the center comes out clean.
