I took this picture Sunday as my husband and I were returning from a walk. We had to cut the walk short because storms were coming in. The combination of the storms and the sunset though were quite a sight.

I shared the picture and this on Instagram.

Light in the middle of this stormy Sunday. Sometimes it is easy to see and others times you have to look hard for it, but it is always there.

For various reasons Sunday was a rough day for me and this sunset was just the reminder I needed. There is beauty and light and so much to be thankful for, we often just struggle to see it.

Wednesday night we had beef fajitas for dinner. They were delicious! I had planned something totally different for dinner that night, but my daughter requested fajitas. We had several peppers that needed to be used up so I decided we could easily change up the menu plan.

I used my homemade fajita seasoning and it made for a quick and easy dinner.

I made gluten free lemon bread recently and it was amazing! I think it might be one of the best gluten free desserts that I have made. I will share the recipe next week. If you are gluten free you will want to make it!

I have also been making these about once a week. We love them.

If you have kids or grandchildren that you enjoy cooking with be sure to check out Organizing Junkie’s Kids Can Cook series. She has some great tips and ideas. I am kind of passionate about the whole cooking with kids subject and even wrote an ebook on the subject.

One of the most important skills you can teach your kids is how to cook. It is a skill they will use for life, so I love that Organizing Junkie is sharing this series.
