I decided to go ahead and plan some baked items this week. Yes, it is summer and it is hot, but breakfast foods are a must, so my trick is to use the oven early in the morning and bake as much as I can. That way I only turn on the oven once and can avoid using it during the rest of the week.
Here is the plan for this week. As always make sure to read labels to be sure ingredients are safe for your family.
Breakfast
Chocolate Banana Oatmeal Muffins– Use gluten free oats
Gluten Free Chocolate Cherry Scones and yogurt
Pancake Muffins– use gluten free pancake batter and gluten free sausage
Dinner
Enchilada Rice and Vegetables- Use gluten free enchilada sauce
Grilled Tomato Pasta– Use gluten free pasta
Slow Cooked Pulled Pork and Mexican Cole Slaw– Use corn tortillas
Tuna Melt Quesadillas– use corn tortillas
Migas– Use gluten free tortilla chips
