Pop Up Chili Pie-

Pop Up Chili Pie is an easy and delicious dinner your family will love!

Pop up pies are a recipe that I have been making for years. The first one I shared here on my site was Pop Up Pizza Pie back in 2009. Some people call it upside down pizza, but we have always called them pop up pies because the batter is similar to a pop over and it puffs up while cooking similar to how a pop over does.

My kids love both the Pop Up Pizza Pie that I make and the Pop Up Taco Pie.

Last weekend we had several families that were visiting from out of town over for dinner. I served hot dogs, chili, and fritos to keep it easy.

I wasn’t exactly sure how many we would have so I made two large pots of chili. It worked great and there was plenty of food. In fact, I ended up with almost a full crock pot of chili leftover.

Pop Up Chili-Pie

Leftover chili is great because you can do so many things with it. Including freezing it. This time though I wanted to do something a little different and decided to make a chili version of a pop up pie. And it worked great!

My oldest daughter ended up putting this together and it was so easy and so good. And I am excited to have yet another way to use leftover chili!

Pop Up Chili Pie

Pop Up Chili Pie

Pop up chili pie is a great way to use up leftover chili. Kids love this!

Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes

Ingredients

  • 5 cups chili
  • 1 cup milk
  • 1 tablespoon oil
  • 2 eggs
  • 1 cup flour or gluten free flour blend
  • 1/2 teaspoon salt
  • 2 cups shredded colby jack or cheddar cheese

Instructions

  1. Preheat oven to 400 degrees.'
  2. Spread chili into a 9x13 pan.
  3. Sprinkle cheese over chili.
  4. In a bowl combine milk, oil, eggs, flour, and salt. Whisk until well combined and smooth.
  5. Pour batter over chili and cheese.
  6. Bake for 25 minutes.

    I still haven’t tried one of your Pop Up pies, but I want to. They look so delicious. It’s such nasty, stay at home weather today, I think I’ll make chili and cornbread for dinner. Then I’ll have leftover chili to make this early next week! 😀

    Is it okay to substitute regular flour in this? Sounds really good!

    This is the same way that I make peach cobbler. Pour the batter over the peaches. I’m going to have to try this recipe since I have leftover chili at home.
