Linda is a wealth of information when it comes to celiac disease and gluten free eating. She has helped me so much with my gluten free journey and I was very honored that she choose to adopt me and try several of my recipes.
She tried one of my pancake recipes and one of my cake recipes and her versions look very good.

Long shot but I lost my daughters favourite birthday cake recipe of yours. It is the cherry chocolate cake recipe. I had it in a handwritten cook book that has been misplaced. I am hoping someone can connect me to Linda, her website is no longer up and she had a recipe for Spanish rice that I never copied down, I would just link to the site when we cooked it and now its gone!!! lol Im so upset. I was so sad to see Linda close her website, but I totally understand with all the changes online. I don’t have her Spanish rice recipe. Was it just a basic Spanish Rice? Do you remember what was in it? I might be able to help you find a similar recipe to it.
Thanks for the reply Lynn! Well, it was a pretty basic recipe yes, but I can’t remember the quantities, here is what I have for the list:
Long grain rice ?
Chicken stock or broth ?
Ground sausage 1 package
2 tbsp garlic minced
8oz tomato sauce
1 onion diced
Seasoning of choice
I think that was everything but not 100% sure – I just dont remember the amount of rice and broth – she also had a nice step by step with it. Im so aggravated that I didn’t save the actual recipe instead of just the link lol. I was hoping maybe she is reachable on another site or recipe blog etc.
Sorry that it took so long for me to reply. I was on vacation for a few days and am just now catching up. I have a Mexican rice recipe that uses chicken broth, long grain rice, and tomato sauce, so the base sounds very similar to the recipe of Linda’s that you are describing. I think you could probably use the chicken broth, rice, tomato sauce ratio from my recipe and add the onions, ground sausaage, garlic etc.that Linda’s recipe had.
