Last Friday I had a busy afternoon running errands and picking up a few supplies for my husband’s office. I needed to have an easy dinner ready when I got home. I changed my menu plan around so that I could put dinner in the crock pot before I left and have dinner ready when I got home.
I decided to use a recipe for tostadas that I have made many times in the past. It is really good and I had everything I needed to make it. You can use this as is for tostadas but it also works good for nachos or a filling for burritos. I like to double it so that we can have it for dinner one night and then use the leftovers for a lunch or two.
This recipe also works well to serve a crowd of people. I double or triple the recipe. Then I set out all the ingredients and everyone makes their own how they like it. It works great for a large group of people.
Tostadas
- 1 pound ground beef, browned
- 2 cans refried beans, or homemade refried beans
- 1 package of taco seasoning
- 8 ounces tomato sauce
- 1/2 cup water
- tostada shells
- and your choices of
- shredded lettuce
- fresh diced tomatoes
- guacamole
- salsa
- olives
- sour cream
- etc.
Combine ground beef, beans, taco seasoning, tomato sauce, and water. Place in a crock pot and cook on low for 4-5 hours. Serve on tostada shells with the other ingredients you have chosen.

I have been thinking about making these, but I am wondering how you eat them! Do you pick them up like a taco? Cut them like pizzas? They seem unwieldy to me. But their delicious allure keeps me thinking about them!
@Catherine, We usually just pick them up to eat them. They are a little messy, but are really good. You could also use this filling on a soft or hard taco shell if you prefer. You do not have to use them only on a tostada shell. I hope that helps and that you enjoy them.
