Banana Oatmeal Breakfast Muffins are an easy make ahead breakfast.

Ingredients

  • 3 cups quick cooking oats, I use gluten free oats
  • 1/2 cup brown sugar
  • 1 cup milk
  • 2 tablespoons butter melted
  • 2 eggs
  • 2 teaspoons baking powder
  • 3/4 teaspoons salt
  • 2 teaspoons vanilla
  • 3 bananas mashed
  • 3/4 cup chocolate chips optional but good

Instructions

  1. In a large bowl combine all ingredients except chocolate chips.
  2. Stir well until combined.
  3. Stir in chocolate chips.
  4. Scoop into greased or lined muffin tin. This makes about 18 muffins.
  5. Bake at 350 for 15-18 minutes.
