German Potato Salad with Roasted Potatoes

Delicious side dish for hamburgers, hot dogs, grilled chicken, and more.

  • 2 pounds red, yellow, or baby potatoes scrubbed and cut into 1 inch or so chunks
  • 6 slices bacon, cut into pieces
  • 1 onion diced
  • 1 teaspoon sugar
  • 1/2 cup white vinegar
  • 1 tablespoon Dijon style mustard
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt or to taste


  1. Preheat oven to 425 degrees. 

  2. In a large bowl stir together potatoes, bacon, and onion. Spread onto a rimmed baking sheet or jelly roll type of pan. Bake for 30-40 minutes or until potatoes are tender and bacon is cooked. 

  3. Remove potatoes from oven and place in a large bowl. 

  4. In a small bowl combine sugar, vinegar, mustard, pepper, and salt. Stir into potato mixture until potatoes are well coated. 

  5. Serve warm or refrigerate until read to serve.
