Mexican chicken salad is a quick and easy lunch or dinner. It is great on bread, on tortillas as a wrap, on a salad, or served with chips and crackers.
In a bowl combine chicken, chilies, 1/2 cup mayo, and salsa. Stir until well combined. Add more mayo if needed for desired texture.
Stir in cilantro, lime juice, salt, and cheese. Stir until well combined.
Serve on bread, tortillas, lettuce, or with chips or crackers.
