Asian Chicken Cabbage Salad

Asian Chicken Cabbage Salad is a quick and easy lunch or dinner.

  • 2 1 lb bags coleslaw mix
  • 4 cups chopped cooked chicken
  • 1/2 cup sunflower seeds
  • 1 1/2 cups dried cranberries ( Craisins)
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 tablespoons soy sauce ( I use gluten free soy sauce)
  • 2 cloves garlic chopped
  • 2 tablespoons honey
  • 1/2 teaspoons ground ginger


  1. In a large bowl mix together cabbage, chicken, sunflower seeds, and dried cranberries. Set aside.

  2. In a small bowl whisk together olive oil, balsamic vinegar, soy sauce, garlic, and ginger. 

  3. Pour dressing over salad and stir to combined. Eat immediately or refrigerate until ready to serve.
