Ingredients

  • 2 pounds lean ground beef
  • 1 green or red pepper chopped
  • 1 - 4.5 ounce can chopped green chilies
  • 2 cloves minced garlic
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 cup crushed tortilla chips
  • 1 egg

Instructions

  1. Preheat oven to 350 degrees.

  2. Line 2 cookie sheets with foil and set aside. You don't have to line the cookie sheet with foil, but it will make cleanup much easier.

  3. In a large bowl combine all ingredients. Mix together until well combined. I use my hands for this in order to get it all mixed together well.

  4. Using a large spoon or cookie scoop form meat mixture into meatballs. This makes about 36 meatballs for me, but that will vary depending on the size you make them.

  5. Bake for 35-45 minutes or until done. The time will vary depending on the size that you make them.
