Banana Snack Cake

Banana Snack Cake with a gluten free option

Banana snack cake is a great lunchbox or after school treat. It also makes a great dessert when you have extra bananas.

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 3 eggs
  • 3 bananas, mashed
  • 1 teaspoon vanilla extract
  • 2 cups flour for gluten free version use Bob's Red Mill 1 to 1 gluten free flour blend
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips optional, but good

Instructions

  1. Preheat oven to 350 degrees. Grease an jelly roll pan, 15x10 or similar sized type of pan. 

  2. In a mixing bowl beat butter, sugar, and brown sugar. Beat until creamy, about 2-3 minutes. 

  3. Add eggs one at a time, beating after each addition, just until well mixed.

  4. Add mashed bananas and vanilla. Mix just until well combined. 

  5. In a small bowl combine flour, baking soda, and salt. Gradually add flour mixture to butter sugar mixture beating just until blended. 

  6. Stir in chocolate chips. 

  7. Spread batter onto prepared pan. Bake for 20-25 minutes or until toothpick inserted into the center comes out clean. 

  8. Let cool and cut into squares.
