Banana Snack Cake is great for lunchboxes, after school treats, and even dessert.
We love bananas at our house, but there always seems to be that small window of when a banana can be eaten. Or at least when we want to eat it.
Bananas go from green to overripe in no time at all. What is too green to eat one day is often overripe the next day.
Ripe bananas are great in smoothies and we often use them that way. But I also like having a variety of recipes like this banana snack cake to use them in as well.
And if a cake has bananas in it, it is healthy right?
So these aren’t exactly healthy, but they are not as unhealthy as some snacks and desserts.
They are homemade and don’t have frosting, so they are healthier than a lot of other things your family might choose. Although you could frost them if you wanted to. I am sure they would be delicious with frosting.
I like to add some chocolate chips to these. I just stir it in to the batter, but you don’t have to. We are nut free because of my daughter’s nut allergy, but chopped nuts would be really good added in as well.
For my gluten free readers these work gluten free. I use Bob’s Red Mill 1 to 1 gluten free flour blend in them and it works great. Long time readers might remember that I never used to use a lot of blends. I still usually prefer the individual flours, but in some recipes, like this one, Bob’s Red Mill 1 to 1 blend works great.

Banana snack cake is a great lunchbox or after school treat. It also makes a great dessert when you have extra bananas.
- 1/2 cup butter, softened
- 1 cup sugar
- 1 cup brown sugar
- 3 eggs
- 3 bananas, mashed
- 1 teaspoon vanilla extract
- 2 cups flour for gluten free version use Bob's Red Mill 1 to 1 gluten free flour blend
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chocolate chips optional, but good
Preheat oven to 350 degrees. Grease an jelly roll pan, 15x10 or similar sized type of pan.
In a mixing bowl beat butter, sugar, and brown sugar. Beat until creamy, about 2-3 minutes.
Add eggs one at a time, beating after each addition, just until well mixed.
Add mashed bananas and vanilla. Mix just until well combined.
In a small bowl combine flour, baking soda, and salt. Gradually add flour mixture to butter sugar mixture beating just until blended.
Stir in chocolate chips.
Spread batter onto prepared pan. Bake for 20-25 minutes or until toothpick inserted into the center comes out clean.
Let cool and cut into squares.
