Chili Relleno Casserole

Chili Relleno Casserole

This might just be my family’s new favorite dinner. We love it!

And so far I have not only made it for my family, I have also taken it to a church dinner and made it to give a friend that has been sick. Everyone loved it.

This is one of those very simple, yet full of flavor dishes that is perfect for a quick and easy meal.

  1. Oh, this sounds delicious! Definitely adding it to my “must try” folder!!! Thanks for sharing!

  2. This sounds like my husband’s next favorite! How many servings do you think this is?

    • It served my family of 5 with enough left for lunch for my husbands the next day. So, I would say 5-6 serving, but I served it with only chips and avocados. You could easily stretch this by serving it with rice and some beans or mexican rice or something like that. For your family you might need to double it. 🙂

  3. This calls for a ‘green pepper’, could you be a bit more specific? Are you talking like a Bell Pepper? ~ Thanks

  4. I used to make this years ago for my Mexican loving son and had totally forgotten about it. Thanks for the reminder!

  5. How much heat would you say this has ?

    • It is pretty mild. All three of my kids ate it and so did I and I am not much for super spicy. My husband actually added hot sauce or salsa to it to add some heat. The only heat comes from the green chilies so it is not much.

  6. Linda Hayes says

OK, this is my type of recipe. Doesn’t matter whether anyone else will like it — know I can devour the whole thing.

  7. What do the eggs and milk add to this dish? Does it taste “eggy”? I love the ground beef, cheese, etc., but not sure about the eggs and milk.

  8. Made this dish tonight…it was gone before it was cold, haha. Thanks for the great recipes 🙂

    • I am so glad that your family enjoyed it! Thanks for letting me know. And if you ever have any left, some in my family have been known to eat it cold we enjoyed it so much. 🙂

  9. Do you think using enchilada sauce instead of tomato sauce would work well?

    • I think that would probably work fine, it would just give it a little different flavor. You might want to cut back on some of the other seasonings, but it should work. I would love to hear how it is if you try it.

  10. Made this last week! It was delicious! The whole family loved it!

  11. I just made this tonight. It is hard to make something that all 5 boys like, but they all loved this!!

    • Now that is a compliment, 🙂 because you are right it is hard to get something that everyone loves. Thanks for letting me know you all enjoyed it.

  12. I have made this many times already. We love it. Thanks for the recipe

  13. I made this today and my husband is wild about it. He asked me to write and tell you how much we loved it. I just forwarded the recipe to my daughter and she is so excited to make it. Thanks for a great recipe.

    • Thank you so much for letting me know. I love quick and easy recipes like this and I love hearing that others enjoy them as well. I hope your daughter enjoys it! Thanks again.

  14. LOVE this recipe!! Very easy and everyone enjoyed it. It is very different than what I normally make so that’s great. I will be making this often for my family. Thanks for the recipe and I love that it is gluten free!!

  15. This recipe sounds delicious. Will be making it this week. How do you think this would freeze. Would I bake it first? Then thaw, reheat. I am wanting to stock the freezer by making an extra of a meal that we’re also eating at the time. Thanks for the recipe.

    • I have not frozen it, so I am not sure. I think it might change the texture a little, but it would probably work. I would bake it then freeze it. Now you have me curious…..I might have to try freezing it to see how it works.

  16. I showed this recipe to my husband and I told him I was going make it for my birthday dinner this next week. I can not wait to try it. Gluten free and simple. What more could you ask for! Thanks Lynn

  17. Thank you so mush for this recipe!! I have been making this about every 2 weeks for the past few months. It’s a regular in my house. Everyone loves it! I have also tried a few other of your recipes and have been very good too.

  18. We don’t use canned goods in our house. Anything I can use instead of chilies? Sounds yummy!!

    • The green chilies add some heat/spice so I would maybe cook a little finely chopped jalapeno with the meat. Or you could use whatever chili/pepper you like to it. I hope you enjoy it!

  19. I made this tonight. My husband said I had outdone myself. 🙂

I plan to pin this on Pinterest and share your link to the recipe with my blog readers. I hope you don’t mind!

  20. I love that you said it freezes well. I live alone an love to freeze leftovers for another time. Keep it up !! Thanks looks GREAT!!!

  21. Thank you for this awesome receipe! We love Mexican food and I like to make this often! Hubby makes this too so thats an added bonus! 🙂
