Tomato Salad

Tomato Salad is the perfect simple summer side dish!

It is currently summer. In Oklahoma that means 90+ degree weather with crazy humidity. The kind of weather where you don’t often want to turn on your oven.

The weather is that way in a good portion of the country right now. There are some cool areas, but even in those areas there are warm days that you don’t want to cook a big meal that heats up the house.

Quick and easy meals are a must this time of year. If they can be made ahead and do not use the oven it is even better.

I recently made a simple dinner with sloppy joes, fries, and tomato salad. It was so quick and easy to make. It was also easy to double so that we had an easy dinner the next night as well.

The night I served this salad recently was slightly cooler than your average summer night in Oklahoma so I turned on the oven and cooked some frozen curly fries to go with our hamburgers and tomato salad. But I could have easily served dinner with just this tomato salad as the side dish and my family would have been fine with it.

Tomato salad is a great side dish for this time of year because July and August are tomato season. Summer is the best time for tomatoes fresh from the garden, the farmer’s market, or your local grocery store. All usually have great options for tomatoes this time of year.

I use basic grape or cherry tomatoes for this salad, but you could easily use other tomatoes for this. The multi colored pack of tomatoes that you can get at Costco or Sam’s Club would be delicious in this.

Tomato Salad

Tomato Salad is an easy summer side dish. 

Course: Side Dish

Ingredients
  • 4 cups cherry or grape tomatoes, cut in half
  • 3 tablespoons oil
  • 3 tablespoons balsamic vinegar
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon dried basil
  • 1/8 teaspoon dried oregano
  • 1/3 cup feta cheese, Use more or less feta if desired
Instructions
  1. Place tomatoes in a bowl. Set aside. 

  2. In a small bowl or measuring cup whisk together oil, balsamic vinegar, salt, sugar, parsley, basil, and oregano. Pour over tomatoes and gently stir to coat. 

  3. Stir in feta cheese. 

  4. Refrigerate several hours or overnight to blend flavors together. 

  5. Serve and refrigerate leftovers.
