Need an easy make ahead breakfast for your family? These banana oatmeal muffins that I am sharing today are the perfect make ahead breakfast. They are also a breakfast that kids love!

Breakfast can be one of the most challenging meals to fix homemade every day, but it does not have to be. Breakfast can be easy and delicious.

Breakfast has always been the meal I struggled with the most when it comes to cooking. I am not a breakfast person. I can easily skip breakfast most of the time.

The rest of my family disagrees with me on this one though. They are breakfast eaters. They want something filling almost as soon as they get up in the morning.

Banana Oatmeal Breakfast Muffins

I learned years ago that breakfast was much easier at our house when I planned ahead. I loved finding things that I could make ahead and just reheat for my family throughout the week.

The banana oatmeal breakfast muffins that I am sharing today are just that. They are so easy to make ahead. You can double or triple them and reheat them throughout the week or freeze them to use later on.

You can eat these muffins cold, but my family likes to heat them up in the microwave.

These are also a great on the go breakfast. You can heat them up quickly and take one with you as you walk out the door.

These are a dense muffin. They are not a light and fluffy bakery muffin. They are basically baked oatmeal in a muffin form. So, if you love my baked oatmeal recipes you need to give the muffin form a try.

Banana Oatmeal Breakfast Muffins are an easy make ahead breakfast. 

Course: Breakfast
Servings: 18 muffins

Ingredients
  • 3 cups quick cooking oats, I use gluten free oats
  • 1/2 cup brown sugar
  • 1 cup milk
  • 2 tablespoons butter melted
  • 2 eggs
  • 2 teaspoons baking powder
  • 3/4 teaspoons salt
  • 2 teaspoons vanilla
  • 3 bananas mashed
  • 3/4 cup chocolate chips optional but good
Instructions
  1. In a large bowl combine all ingredients except chocolate chips.
  2. Stir well until combined.
  3. Stir in chocolate chips.
  4. Scoop into greased or lined muffin tin. This makes about 18 muffins.
  5. Bake at 350 for 15-18 minutes.

    Such a great twist on your famous baked oats, Lynn! Your banana chocolate chip baked oatmeal is my kids’ favorite, so making it portable is brilliant ๐Ÿ™‚ Do you think your other varieties of baked oatmeal would also make good muffins?

    • Yes it works well with my other baked oatmeal recipes. I have had a lot of people ask if you bake them in muffin tins, so I thought I would share a few as muffin versions. It works with pretty much any baked oatmeal recipe though.
