Keeping It Real- Eggless Muffins?!

You all know I like to keep it real. We all have those days where things just don’t go as planned. Or those days that are crazy busy and we get behind on everything. Or those days where cooking disasters happen.

Today I am sharing one of those days with you. Yes, they happen to me. I am just like everyone else. I have those days also.

Those muffins above look delicious don’t they? Well, looks can be deceiving. Those muffins may look good, but they were dry, crumbly, and not great when it came to taste.

As soon as I tasted one, I knew something was wrong. They were just not right taste and texture wise. So, I pulled out the recipe and read over it a few times to see if I could figure out what went wrong.

As is often the case, it was not the recipe, it was me. Yes, me. I totally forgot the eggs. Tackling too many things in the kitchen at once is not a good idea, but I continue to do it. I try to do multiple things at once and I really should know by now that is not wise.

Not staying focused in the kitchen means you sometimes forget the eggs. I have done it before and I will probably do it again. Maybe some day I will learn my lesson…..And this just proves we all make mistakes. We all have cooking disasters. And we all have those days.

    LOL! I do it ALL the time! I melt the butter in the micro for pancakes instead of using oil. Then everyone is like “this isn’t your usual”. Hmmm… wonder what went wrong? Then later in the day… I find the butter still sitting in the microwave! Just recently, I forgot to double the eggs when I was making 2 cake mixes at the same time. Wouldn’t have been such a big deal, but I do cakes for $ on the side, and this was one of those! Luckily I caught it in time! We’re all human! 🙂

      I have done that with butter many times. That and left it in there too long and had it explode all over the microwave…….:-)

    I have disasters daily. lol I was incubating yogurt in the oven, forgot, and preheated the oven to 400. Yeah.

    I was cooking several dishes for a mini freezer day. Everyone was looking forward to my banana bread, which I rarely make the time to make. When I finally took it from the oven an hour later, it hadn’t risen. At all. It was a thick, gummy brick. I forgotten to put in the baking powder. Two teaspoons of something makes such a marked difference when baking. Needless to say, I’m back in the kitchen today making it the RIGHT way.

      I have forgotten baking powder or baking soda before and you are right, that is when you are reminded what an important ingredient they are. 🙂

    I added 10 oz of enchilada sauce a step too early to what was intended to be tamale pie, leaving us with a thick cornbread SOUP instead of a cornbread crust. It happened for the same reason – trying to do too many things at once in the kitchen! Anyway, we salvaged the soupy stuff the next night and turned it into a sort of sauce for cheese enchiladas (made the Lynn’s fold-over way, and served with Lynn’s Mexican rice!). An annoying experience, but alls well that ends well I guess!

    Oh my gosh! Just this past weekend, I was trying to complete my regular Saturday cleaning, doing the laundry and also bake some brownies for a benefit bake sale. Well as you can imagine, things didn’t go as planned as I put the brownie mixture into the pan and was just putting it in the oven when I realized that I forgot to grease the pan.

    I thought about it a minute – but I figured that I had melted butter in the brownie batter, it should be fine. WRONG. Brownies stuck all around the edges! I did salvage some of the middle pieces though!

      I have taken many brownies to potlucks and gatherings on plates instead of the pan for that reason. Or they edges get to done. Salvaging the middle and putting them on a nice plate often saves the day. And as long as they taste good no one cares.

    Too bad you didn’t accidentally add some applesauce, it could have saved the muffins.
    I have a ds who is actually allergic to eggs so I have to substitute anyway.
    If eggs are only being used for their moisture like in cookies you can substitute 1/4C applesauce for each egg.
    If you have a recipe that uses the eggs to help things rise, as in baking cakes, you have to add some baking soda and vinegar.

    Hopefully you figured out how to salvage the muffins to use as a crust for quiche or something.

      We did eat most of the because I could not stand to throw them out and waste them. And you are right on the eggs, I have used other things as the replacer for eggs, but always plan it to make sure there is moisture. This time it was just plain my fault. I did not know the baking soda vinegar trick so thanks for sharing that one. I will have to remember it!
