I still love to cook and bake, but my husband and I don’t need big batches of cookies and baked goods.

Ingredients
A few basic ingredients and Bob’s Red Mill 1 to 1 Gluten Free Flour blend are all you need for these easy and delicious gluten free cookies.
- Bob’s Red Mill 1 to 1 Gluten Free Flour Blend – I tested this recipe with Bob’s Red Mill 1 to 1 Gluten Free blend. Other blends may work, but they have not been tested.
- cornstarch
- baking soda
- salt
- brown sugar
- sugar
- butter
- egg
- vanilla extract
- gluten free semisweet chocolate chips


Small Batch Gluten Free Chocolate Chip Cookies
These gluten free chocolate chip cookies are perfect for when you just want a few cookies for dessert.
Ingredients
- 1 cup Bob's Red Mill 1 to 1 Gluten Free Flour Blend
- 2 tablespoons cornstarch
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup brown sugar
- 1/4 cup sugar
- 5 tablespoons butter, melted and cooled
- 1 egg
- 1 1/2 teaspoons vanilla extract
- 1 cup gluten free semisweet chocolate chips
Instructions
- Preheat oven to 350 degrees.
- In a small bowl mix gluten free flour, cornstarch, baking soda, and salt. Set aside.
- In another bowl whisk together sugar and brown sugar. Whisk in melted butter until combined and smooth.
- Whisk in egg and vanilla until smooth.
- Using a wooden spoon stir in flour mixture until dough forms.
- Stir in chocolate chips.
- Scoop dough into 2 inch balls. Drop onto a cookie sheet and flatten slightly.
- Bake 10-12 minutes or until edges are slightly browned, but centers are still soft.
- Let cookies cool on the cookie sheet for 3-5 minutes.
- Transfer cookies to a cooling rack to finish cooling.
