What’s For Dinner Tonight Spring 2025

It is time for another What’s For Dinner tonight!

It has been almost a year since I shared a What’s For Dinner Tonight post. What’s For Dinner Tonight is where I share what we are eating. They are real-life, unedited pictures of the meals that I have served my family.

I love these posts because they give you a look behind the scenes of my kitchen.

A lot has changed since I started my website back in 2008. My kids that were six, eight, and ten, are now all college graduates with lives of their own.

What hasn’t changed, though, is my love of cooking. I love to spend time in the kitchen creating meals. I have a stack of recipes that I can’t wait to be shared with you over the next few months.

Now, let’s look at what we have been eating over the last few weeks. These are unedited pictures of the meals as we eat them.

I am still working on perfecting gluten free sourdough recipes. This gluten free cinnamon bread is almost ready to share with you.

I have been making baked chicken legs for years. They are still a favorite.

I love to make a pan of these so that we can eat them for dinner and then have the leftovers for the next day or two. Sometimes the simplest recipes are the best.

Breakfast for dinner has been an almost weekly meal at our house for years. Sometimes I just make eggs, sausage, and potatoes, and we eat them however we want.

My husband usually turns it into a breakfast burrito, but I love to just pile it all into a bowl with some cheese and salsa on top.

If you are a long-time reader, it will not surprise you that we had egg roll in a bowl for dinner. I love how easy this one-pot meal is to make.

I have a new Mexican bowl recipe that I will share with you soon! I took an old favorite and changed it up in a new way. It was so good!

After a long day of working outside in the yard, I needed an easy dinner to make.

I had some leftover chicken that I needed to use up. I shredded up the chicken and put it on top of a Costco gluten free cauliflower crust pizza. I also added extra cheese on top. It made for a great quick and easy dinner.

I tried a new omelet recipe. It tasted fine, but it needed more flavor. It needs some work before I share it.

I used to make spaghetti all the time when my kids were younger, but I rarely do now. Last week, I was craving pasta, so I made some sauce and served it over gluten-free pasta. It was another easy and delicious meal.

I am so glad that it is grilling season!

We have been buying a half of beef from a local rancher for years. The steaks are so good! They are also huge steaks. I ate less than half of one.

I have also made Ina Garten’s Chocolate Chunk Cookies multiple times over the last two months. If you have not tried them, you need to. They are so good!
