
This recipe is adapted from my quick and easy beef and barley. We have really enjoyed the barley version, but I have wanted to try adapt this dish using rice for a long time. Since I can no longer have barley, it was a good time to finally give a rice version a try.
This turned out really good. My whole family liked this. This is a great meal to make on a very busy night. This is not a fancy dish, but it is a good meal. Serve this with some bread and a vegetable or salad and you have a really nice meal.
Easy Beef and Rice
- 1 pound lean ground beef
- 1 medium onion, chopped
- 1 can (14 ounces)diced tomatoes with liquid
- 2 cups beef broth ( I make mine by using water and beef bouillon or base)
- 1 cup rice
- 1 teaspoon chili powder
In a large skillet, cook ground beef with onion until the meat is no longer pink; drain. Stir in remaining ingredients; bring to a boil. Reduce heat; cover and simmer for about 20 minutes or until rice is tender.

Wow! That does look really easy (and really good) =D.
We made this for our family of 6. I use the 1.25 # ground turkey. I took the broth to 4 cups and used 2 cups long grain brown rice. I didn’t use the chili powder. My husband thought it smelled awful but was delighted that it tastes ok- much like a rice r roni. Thank for the idea!

i am going to make tonight….busy soccer night…but instead of diced tomatoes i am going to use salsa instead because it is what i have……really enjoy the ebook cookbook my family wants to try all dishes
My mom used to make something like this with Minute Rice. I’ve tried to make it healthier with brown rice but the rice never seemed to soften, no matter how much water I kept adding. I figured the acid of the tomato kept it from softening, much like would happen with cooking beans. Do you think for this dish, I’ll have to stick with white rice?
I can go back to the drawing board with starting with more water/broth in the first place.
I have never used brown rice in this, so I am not sure. You may be right though it may have to do with adding the tomatoes etc. to it.
