Spaghetti Pie

This is a recipe that I have been making for years, probably close to 17 years.

It is one of those kid friendly, inexpensive meals that freezes great and works well for taking to potluck dinners or to a friend in need.

I cannot count how many times I have made this over the years, but I know it is a lot. It is tried and true family favorite in our house and is perfect for Ground Beef Thursdays.

 

Note: Although this recipe freezes really well, I do not like the way it freezes with gluten free pasta. The texture of gluten free pasta changed quite a bit when frozen.

  3. I used to make this but my family got tired of it – time to bring it back!! How do you avoid burnout by your family on regular meals? My kids love tacos, chicken fettucini, ziti, etc but I try not to make those more than once a month because they all complain (especially my husband) of having the same old thing.

    I absolutely love menu planning but sometimes it gets frustrating to avoid same old, same old but still make things they all will like (or at least will all like in some variation whether its my husband turning spaghetti and meatballs into a meatball grinder and not using the spaghetti)

    • I know what you mean about getting tired of food. I not only get tired of eating it, I get tired of cooking it. :-) My menus vary a lot. Even on old family favorites, I only make them once a month or less. This recipe is one we love, but I still only make it a few times a year. We eat things like tacos, pasta, and pizza a lot, but I can really very those and change them up so that they do not get old. I think keeping a menu plan helps me keep track of how often I am fixing things because I can go back and look at past menus to see when we had it last or what I have not made in a long time.

    My problem is what to serve with some dishes. I get so tired of the same ole same old thing, green beans. Seems like that all my kids will eat. What would be a good side with this?

    • My kids love corn, green beans, salad and raw carrots. They will eat other things, but I am with you on the same old side dishes. We tend to also eat the same ones over and over because those are what the kids like.

  6. There are so many awesome variations you can do with this wonderful recipe. Its great if you cook a box of organic frozen spinach, drain, squeeze out excess water and mix with cottage cheese (I’ve used ricotta as a sub too) then spread over the noodles. Its a great way to add the veggies in – the sauce sorta hides the spinach. If you have picky kids they miss it. Then you totally have a one dish meal. A friend of mine has also used softened cream cheese and OMG it was INSANELY delish. Not as healthy though lol.
