Crock Pot Beef Sandwiches

My crock pot is one of the most used small appliances in my kitchen.

On busy days, using the crock pot saves me so much time and money. Really, my crock pot saves me time and money all the time, but on really busy days, I appreciate it even more.

These crock pot beef sandwiches are something I put together recently. I had defrosted a roast and had planned something different, but I was going to have to be gone all day and knew I needed something really simple for dinner that day.

I put the ingredients together the night before and let it marinade overnight. I placed it  in the crock pot in the morning, left it cooking on low all day, and shredded it for sandwiches when I got home.

I took some bread and placed cheese on it and toasted it in the oven for a few minutes, just long enough to melt the cheese and toast the bread.

I served it with salad and a bag of frozen french fries, and dinner was on the table in no time. And yes, although I love homemade oven fries, I do occasionally also use store bought fries.

Simple, yet healthy dinners are my favorite meals to serve and these crock pot beef sandwiches are just that.

    I noticed that you have posted several sandwich recipes. What do you use for those at your house that have to eat gluten free?

    • I have been using Udi’s gluten free hamburger or hot dog buns for sandwiches like this. Or I use a homemade gluten free roll, but I don’t usually have those on hand. I try to keep a package or two of Udi’s in the freezer for times when I need them. We like sandwiches like this because those that eat regular bread can and those that need gluten free can use a gluten free bun or roll.

  3. One question. Do you put the marinade and the roast into the crockpot to cook or just the roast by itself.

  4. Okay forget my last question. I have read this recipe 600x and you would have thought I would have seen it plain and simple. Just a duh moment, sorry about that. Thanks for the recipe I am trying it tonight.

    A couple of questions: If my roast has a bone in it, do I need to take it out before cooking? And do you trim any of the fat off the roast before marinating or do you just put the whole thing in the crock pot and then shred the beef around the fat?

    • If there is a lot of fat I would trim some off. And if it has a bone I would just leave it in and cook it. It might be a little harder to shred the meat with a bone, but most of the time the meat will fall off the bone after cooking that long.
