Today I have three delicious summer recipes to share with you! These are all easy to make and perfect for this time of year. Fish Tacos

We love Fish Tacos. They are a simple, fairly healthy, meal to make. They work great all year long, but we especially enjoy them this time of year because they are easy to make without heating up the kitchen.

Mexican Rice

Mexican Rice is the perfect side dish for any Mexican or Tex-Mex type of meal. It has been a favorite with readers since I first shared it back in 2009.

It has been way too long since I made No Bake Lemon Blueberry Cheesecake. This is going on my menu plan soon. It is great for taking to picnics and potlucks this time of year.

    I made the blueberry pie for father’s day!

      my recipe is a little different. can of blueberry pie filling, one crust, one block of cream cheese, 10x sugar, lemon juice, and a tub of cool whip. not as dense as yours. from the 70s I guess–I remember my mom making it. I haven’t made it in years. one of my husband’s favorites.
