Take a classic chicken salad sandwich to the next level with this easy to make chicken salad with bacon and cheese recipe.
We are keeping it simple today with a perfect meal for a quick lunch or dinner. It is also great for using leftover cooked chicken or rotisserie chicken.
This chicken salad with bacon and cheese could also be called a copycat version of Chicken Salad Chick’s Sassy Scotty Recipe.
Do you know what Chicken Salad Chick is? Chicken salad is more of a southern meal and Chicken Salad Chick is a southern restaurant that serves all kinds of chicken salad.
Chicken Salad Chick chicken salad is amazing! It is so good.
However, it is expensive. Since I eat gluten-free and there is bread everywhere at Chicken Salad Chick, it also has a high risk of cross contamination for me.
My solution is to make homemade chicken salad, but I make it fancy chicken salad so I feel like I am eating at Chicken Salad Chick.
My family’s favorite chicken salad at Chicken Salad Chick is the Sassy Scotty Chicken Salad. It is full of bacon and cheese. It also has a slight ranch flavor that I love.
But it also has celery and green onions in it. Have I ever mentioned that I hate celery?
I really do not like it. I often leave it out of recipes. And unless it is chopped really small, I pick it out when it is in something that I am eating.
Since I don’t like the celery and I don’t really like the green onions in a sandwich, I leave them out of my copycat Sassy Scotty Chicken Salad Chick recipe.
One of the reasons that I love making this for our family is because it is easy to serve with regular bread or gluten free bread. Everyone can eat it however they need to.
Because of that, my recipe is more like my version of the Sassy Scotty, not a true copycat version.
If you like celery and green onions though feel free to add them.
