It is Monday, which means it is time for another Cooking Through My Collection recipe. I love this series because it forces me to pull cookbooks off my shelf that are often neglected.
Today I am sharing an apple muffin that is delicious. I recently tried these easy apple muffins from an old Bisquick Cookbook , it really is not that old of a cookbook, but I have had it for awhile.
This cookbook shares Bisquick recipes from over the years. This muffin recipe is from the section that shares recipes from 1930’s. Did you know that Bisquick has been around since 1930? I had no idea it had been around that long until I read it in this book.
I will admit that I am not a huge fan of the big yellow box. It has it’s uses, but I much prefer to make a homemade version of bisquick or a homemade gluten free version. But use what you have and prefer. For most recipes the big yellow box, homemade, or homemade gluten free all work fine.
I decided to try these easy apple muffins because they are perfect for a quick breakfast or snack. They also freeze great so they are great for making ahead and freezing for busy days.
We loved these. They are a little more dense than modern muffin recipes, but they were delicious. And they were really easy to make. These would be a great recipe for making muffins with kids because they are easy and only use a few ingredients.
- 2/3 cup milk
- 2 tablespoons oil or butter melted
- 1 egg
- 2 cups Bisquick
- 1 teaspoon cinnamon
- 3/4 cup peeled and chopped apple
- 1/3 cup sugar
- Preheat oven to 400 degrees.
- Line a 12 cup muffin pan with liners or grease well.
- In a bowl whisk together milk, oil, and egg until well combined.
- Stir in Bisquick or baking mix and cinnamon. Stir just until combined.
- Stir in apple.
- Scoop into muffin cups, filling each cup about 3/4 full.
- Bake for 15-17 minutes.
- Let cool on the wire rack.
