Chocolate and peanut butter are always a winning combination. These homemade chocolate peanut butter granola bars are no exception.
I love keeping snacks like this on hand during the school year for a treat for my kids. These also work for a quick grab and go breakfasts on busy mornings.
Homemade granola bars are great because you know what is in them. You can control the ingredients. These are not really a healthy food, but I do feel better that they are at least healthier when I can control the ingredients. For us this is important because we deal with food allergies, but knowing what is in your food is good for everyone.
I don’t use a lot of corn syrup, but in this recipe it does help give it a better texture. I have used brown rice syrup in place of the corn syrup and it works too. So if you have some feel free to use that in place of the corn syrup. I have used extra honey in place of the corn syrup, but the texture is not the same.
For the peanut butter part I like to use Sunbutter or soy butter since my daughter is allergic to peanuts. But if you can have peanut butter use the real thing. Almond butter would also be great in these.
- ½ cup butter
- ½ cup brown sugar
- 2 tablespoons honey
- 2 tablespoons corn syrup or brown rice syrup
- 1/2 cup peanut butter, sunbutter, or soy butter
- 2 1/3 cups quick cooking oats ( use gluten free oats for gluten free version )
- 1 cup chocolate chips
- 1 tablespoon coconut oil
- Grease and 8x8 pan. Set aside.
- In a pan combine the butter, brown sugar, honey, corn syrup, and peanut butter.
- Stir constantly over medium heat until butter melts, sugar dissolves, and mixture is smooth.
- Remove from heat and add oats. Stir well until oats are well coated.
- Spread mixture into 8x8 or similar pan. Bake at 350 for 20- 22 minutes.
- Place chocolate chips and coconut oil in a small bowl and microwave at 50% power stirring every 30 seconds until melted.
- Spread on bars and let bars cool for 15 minutes. Cut into bars.
- Cool for about 1 hour more in the pan and then remove bars from the pan. You can place the bars in the refrigerator to harden the chocolate if desired.
- If you wait to cut and remove the bars from the pan until the pan is completely cooled, the bars will be very hard to remove.
