These small batch gluten free chocolate banana muffins are great for when you want gluten free muffins but don’t want to make a big batch of them.

Now that I am mainly cooking for just my husband and I, I don’t usually want a big batch of muffins.
Yes, I can freeze muffins, and I often do, but sometimes even with freezing some of them, a full recipe of muffins is too much.
To solve that problem, I have come up with a few small-batch muffin recipes.

Earlier this year I shared my small batch gluten free banana muffins. Today I am sharing the chocolate version of those muffins.
Chocolate makes them even better!

These small batch gluten-free chocolate muffins are perfect if you have just one person in the family who eats gluten-free or if you are like my husband and me and don’t have a whole family to feed.

Small Batch Gluten Free Chocolate Banana Muffins
A delicious recipe for when you need just a few gluten free muffins
Ingredients
- 1/2 cup Bob's Red Mill 1 to 1 Gluten Free Flour Blend, see not below
- 2 tablespoons cornstarch
- 1/2 cup Dutch processed baking cocoa
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 eggs
- 1/2 cup sugar
- 1/4 cup oil
- 3/4 cup mashed bananas
- 1/2 teaspoon vanilla
- 1/2 cup gluten free chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Grease 8 cups of a muffin pan or line with muffin liners.
- In a bowl, combine gluten-free flour, cornstarch, Dutch-processed baking cocoa, baking powder, baking soda, and salt. Set aside.
- In another bowl, cream together egg, sugar, and oil.
- Add in bananas and vanilla. Mix well.
- Stir in flour mixture just until combined.
- Scoop batter into muffin pan. This makes six muffins.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let cool in pan for 3-4 minutes and then remove to a wire rack to cool.
Notes
This recipe was tested with Bob's Red Mill 1 to 1 Gluten Free Flour Blend. Other blends may work, but they ahve not been tested.
