Eggnog Pie

My son loves eggnog. He does not like pasta or rice or many other normal things but he loves eggnog. Eggnog is a strange thing for a six year old to like. I can’t figure it out, but he does. In fact he thinks that stores should sell eggnog year around. He just can’t understand why you can only buy it two months out of the year.

A few years ago I saw several recipes for eggnog pie. After looking at these recipes I came up with a version of my own. We really like this. It is a nice treat to have around the holidays. If you like eggnog you will love this pie.
Eggnog Pie
1 (5.1 ounce) package instant vanilla pudding
1 1/2 cups eggnog
2 cups heavy cream
1 graham cracker pie crust
Whip heavy cream until thick and fluffy. In a separate bowl mix pudding mix and eggnog until well blended. This will be very thick. Fold in whipped cream until all folded in. Carefully spoon into graham cracker crust. Refrigerate for at least 2 hours before serving. Cut and serve.

Wow, I never heard of eggnog pie before. Sounds and looks delish! Amazing that your son loves it, true.

MMMM! That looks great. Yankee Bill is another one of those folks who really loves eggnog. I think I put on a couple of pounds last year just from the eggnog (fortified with rum) that he kept feeding me :)

HI, I’ve made a similar pie for many years. We usually serve it with thawed sweetened raspberries. That is very festive. Thanks for the memories.

I’ll bet this would make a really good cheesecake pie. Maybe even use cheesecake pie filling.

Great recipe, and looks pretty easy, too. Unlike with your son I can’t get anyone to touch eggnog except myself. I buy a half gallon every year and have to work to down it all before it goes bad. Putting it in a pie might be a good way to get some of my family members interested. Thanks for the great idea.
