I love grilled cheese sandwiches. Not only are the delicious they are also a quick and easy lunch or dinner.

Classic grilled cheese sandwiches are great. Just bread, butter, and cheese cooked to perfection. But I also love to change up grilled cheese sandwiches by adding meat, using different kinds of cheese, and things like mushrooms and onions. These things take grilled cheese sandwiches to a whole new level.

Roast Beef and Mushroom Grilled Cheese Sandwich

The version grilled cheese I am sharing today actually contains onions and mushrooms. I cook the onions and mushrooms until they are tender and slightly browned. They add so much flavor to the sandwich this way.

For the cheese I used provolone. You could easily use a cheddar or another kind of cheese, but the flavor of the provolone pairs well with the roast beef, mushrooms, and onions.

    • Yes, this is a great meal and great for kids because you can easily leave off the onions or mushrooms if you have someone that doesn’t like them.

  2. Grilled cheese nights are really a big deal at our house. For lunch the kids will make American cheese on white bread but at least once a month we have them for dinner with homemade soup (usually tomato basil). I go to the local bakery and buy real sourdough and marbled rye. Then we have provolone, cheddar, pepper jack, and anything else that catches my eye on the cheese display. For meats we have ham and roast beef for sure and sometimes turkey or pulled pork. Then pickles, onions, tomatoes, fresh basil, etc. whatever I have to dress it up. Each person then makes their own so it’s an easy dinner for me to get on the table.
