Breakfast Fried Rice

Fried rice may not be a traditional way to serve fried rice or what you think of when you think of breakfast, but it is a very good and inexpensive meal.

It is simple to fix and and so easy to make a large batch up for the week. This is one of those recipes that is great made in a large batch over the weekend and served for several days during the week.

Breakfast fried rice is mainly rice and eggs, with a little big of meat added in. It is filling, healthy, and very good.

I love that this makes a great breakfast or breakfast for dinner.

This freezes great and can easily be defrosted and reheated as you need it. It also makes a really good lunch or breakfast for dinner.

This breakfast fried rice is basically the same as my pork fried rice, but I add in a little extra egg and I use a kielbasa or breakfast type sausage as the meat.

I also leave out the veggies in this, but like any fried rice, you can really make this your own and add whatever you like to it.

Yield: 6 servings

Breakfast Fried Rice

A great breakfast or breakfast for dinner. It is also a great way to use up leftover rice.


  • 2 tablespoons oil
  • 4 eggs
  • 4 tablespoons soy sauce ( I use gluten free)
  • 1/2 lb Kielbasa style sausage cut into chunks (I use the precooked kind)
  • 2 cups cooked rice (cold leftover rice is best)
  • 2 tablespoons rice vinegar


  1. Mix together 2 tablespoons of soy sauce with the eggs and beat well.
  2. Heat 1 tablespoon of oil in a large skillet or wok.
  3. Add egg to pan. Swirl and scrape egg to cook, basically you are scrambling this, but do not over cook it. You want this to error on the side of not done because you will be adding this back to the pan later on.
  4. Remove egg from pan and set aside.
  5. Return pan to stove.
  6. Add a little more oil (I use bacon grease if I have it.)
  7. Rice and cook for 4-5 minutes or until rice is starting to lightly brown.
  8. Add the egg back to the pan along with the meat, remaining soy sauce and the rice vinegar. Let cook for 2-3 minutes more.
  9. Add more soy sauce to taste.

  4. Fried rice is actually a Chinese leftover dish. Everything goes into it but the kitchen sink. So, I make this for dinner sometimes…I add either leftover ham, sausage, chicken, and whatever else I find.

  5. Would sesame oil be ok in this or do you want to keep it on the non chinese tasting side? Would regular breakfast sausage work in this? Also I bet this would be good stuffed in a tortilla with a little cheese.

    Why the rice vinegar? It is not a staple for me. Nor anything that I have ever bought. Thoughts from anyone is fine

    • The rice vinegar gives it a nice extra depth of flavor. It is common in many fried rice recipes, but you could leave it out if it is not something you normally use. I keep it on hand for homemade salad dressings, refrigerator pickles, etc. It just adds nice flavor and a little bit of tang. I hope that helps.

  7. Fried rice is a breakfast staple at my house! We eat rice with most meals (Filipino/Vietnamese household) and collect the leftover rice from the week in a container in the fridge. Come Saturday morning, leftover bits of meat and veg from the week get thrown into the pan along with the rice. Add an egg — instant breakfast!

    Quick note: fried rice is really versatile so for folks that don’t want to add the vinegar, they don’t have to. One of the breakfast staples growing up in my family was sinagag (Filipino garlic fried rice) which, at its simplest, just uses fried garlic and salt to flavor the rice. When I’m really lazy, I just use garlic salt to taste. Perks up old rice and goes well as a side dish.

  9. Just made this this morning, Lynn! It was a fun change for breakfast. I did not have rice vinegar, but I added a couple packets of duck sauce I had rolling around just for a little sweetness and flavor. It turned out well! Thanks for the recipe and idea. 🙂

    • I am so glad you like it! I love fried rice because it is so easy to change up the ingredients like you did with the duck sauce. You really don’t have to follow the recipe just the idea. And the duck sauce sounds like a fun change to add to fried rice.

  11. Help, I added the 2 Tablespoons of soy sauce to our eggs and they made the eggs BLACK! We couldn’t stop laughing and the chooks are right now eating black scrambled eggs … lol I am wondering what soy you use? Ours is actually a dark soy so am thinking that has made the difference, although 2 Tablespoons does sound a lot for four eggs. Have just remade the eggs with a teaspoon of soy … yeah yellow eggs … lol

    • I use a gluten free soy sauce so that might be part of the color difference. Just add a small amount to the eggs and you can add the rest with the rice or when serving. Sorry about the black eggs……Hopefully it still tastes good.

      • I will have to buy a different Soy, it was far too dark for the rice even. I simply added less and the dish was devine. Just finished now 🙂 My two little girls came in from the deck with their bowls and told me it was horrible and my face dropped. They really had me going … little monsters … they absolutely loved it … and thought it would be funny to trick me … may make tomorrows PE session a little harder on them in retaliation! Thanks for another great recipe. (Chooks enjoyed the black eggs … 😉

  12. This has become my family’s favotire go to breakfast! In fact they encourage me to make extra rice when we have it for dinner so that I can make this for breakfast the next day. I like it for using up the last bits of meat and veggies in the fridge. Ive put all sorts of stuff in it and it never turns out the same way twice:) My husband likes spicy food so I put some chopped jalapenos in his.

  13. I was thinking about fried rice for breakfast this week as I try to push off grocery shopping. I thought we had more oatmeal, but that got used up today. Banana bread tomorrow. Wednesday, I’m going to break out the fried rice. Thanks for the confirmation.

  14. So freaking good. I used hot links sausage instead of kielbasa, because it’s all I have in my fridge. I cooked the rice the night before using beef broth instead of drowning it in soy sauce. I’ll have to make this recipe again soon. Thanks, Lynn!!!! 🙂
