Frugal Meal Idea

We enjoy Mexican food in our family. We have it quite often for dinner. One of our favorite things to have is homemade refried beans, Mexican Rice, and cheese quesadillas. You will see this on the menu at least twice a month. This is one of the few meals that I cook over and over again.

I posted several months ago how I make my Mexican Rice. It is really quick, easy, and frugal. Yesterday, I posted how I make and then freeze my refried beans, so that I always have them on hand. Quesidillas are also quick and easy to prepare.

So, why spend money going thru fast food when you can have a quick, healthy, and frugal alternative like refried beans, Mexican rice, and quesidillas for dinner.
