Over the last few weeks I have talked to several people new to gluten free. They were overwhelmed and did not even know where to start with a gluten free diet. My advice for both of them was to focus on what you can have.

The other advice that I gave them was to step back and think about all the food they currently eat that is already gluten free or can be easily made gluten free. So much of what we eat, and have always eaten, can be easily made gluten free.

And it is regular food too. It is not special meals full of special ingredients. By reading labels and simply using gluten free pasta, gluten free soy sauce, etc.,  you can make so many meals gluten free. It really is not that hard or complicated. It just takes a little extra work and reading labels.

Over the last few months I have shared a few quick and easy gluten free main dish recipes with you. My goal with doing that has been to help those new to gluten free or those that are struggling with the challenges of eating gluten free.

I want to help you make gluten free quick, easy, and delicious. I also want to teach those new to gluten free how easy it is to adapt recipes that they have always made, to be gluten free. I plan to do more and more of this.

Hopefully those that have been gluten free for years will enjoy them as well, along with sharing any tips you have. I love hearing what others do to make gluten free quick, easy, and delicious. So feel free to share your tips and ideas in the comments.

Today I am highlighting a chicken and rice soup. This chicken and rice soup is so easy to make gluten free, because it is a regular meal that is basically gluten free as long as you read labels.

Quick and Easy Chicken and Rice Soup

This is a recipe I shared almost two years ago on my website, it is not specifically labeled gluten free, but it can easily be made gluten free because the ingredients are chicken, carrots, rice, broth, spices, and a few other things.

The only special thing you need to do to make this chicken and rice soup into a gluten free chicken and rice soup is to use gluten free chicken broth or homemade chicken broth. Many chicken broths are gluten free and available at most grocery stores. Just be sure to read the ingredients on the label.

If you have some homemade chicken broth in your freezer you can easily use that too.

If you are looking for a simple gluten free dinner this chicken and rice soup is so easy to turn into a gluten free chicken and rice soup. It is also a great comfort food type recipe for the fall and winter.
