Lemon Buddies

In our house we seem to go through more snacks during the summer than we do during the rest of the year. Does anyone else have this problem?

There is something about playing hard outside, working in the garden, the kids swimming, and just the general business of summer that makes my kids think they are starving all the time.

I usually offer them healthy snacks like fruit, cheese, or smoothies, but my kids are like all kids and they like special treats. So, summertime for me is the perfect time to make fun snacks to keep on hand.

However, with the heat of the summer, I don’t want to spend a lot of time in the kitchen with the oven on. What I love are no bake snacks that are quick and easy to put together.

In the past I have made Muddy Buddies, but since my daughter has developed her peanut allergy we can no longer have Muddy Buddies. We love Snow Buddies (I now leave the nuts out of the Snow Buddies when I make them), but I have been looking for something a little different.

I was recently looking around the Chex Cereal site for variations of their mixes that I could make and I came across a lemon version of their muddy buddies. Well, I love lemon and I love chex mix type snacks, so I knew this was a recipe I would enjoy.

And I enjoyed this a little too much. Seriously this is one of those things that I just kept snacking on and so did my kids. It is now a favorite snack,

We love it and it makes the perfect summertime treat.

Adapted from Chex ( I can never stick to a recipe, so yes I changed a few things.)

Oooo! These are perfect for summer. To me chocolate snacks do not mix with the heat, just don’t like chocolate in the summer. My grandchildren thank you! I can’t wait to make these!

Sure you can make Muddy Buddies! Just sub soy butter** for the peanut butter & use a chocolate chip that’s not processed with peanuts. We use Hershey’s brand choc chips.

**Please try it before you turn up your nose. Wal-Mart brand is quite good & is a good deal.

@Rita, We use soy butter. My daughter actually prefers it over the sunbutter. We did not like the taste of it in Muddy Buddies though. For some reason it was just not the same, BUT we do like it in many other things. I did not know that walmart had their own brand of soy butter! I am going to look for that next time I go to walmart. I have not even looked at the PB area for a while, but now I will have to. THANKS!

My younger son too has a peanut and tree nut allergy so I usually avoid the PB area. I will have to go check it out now.

@Dryscha, I know! It is one of those snacks that is hard not to just sit there and eat and eat. :) I am glad you enjoyed it!

Made these today. Kid tested: Kid approved!! Used Wal-Mart’s Toasted Wheat Cereal.

Thank you so much for sharing. Next time I am going to use my butter replacement. (3/4 cup coconut milk, 1/2 cup water, 2 tbsp yellow cornmeal, 1/2 tespoon salt…place all in a saucepan and bring to boil; simmer 5 min. Let cool a little; place in blender on low then increase to high for one minute or until smooth. Place in container and chill until set. Borrowed from Seven Secrets Cookbook by Neva & Jim Brackett)

@Ronee, I am glad to know that you enjoyed them! I have never heard of that butter replacement, but it sounds very interesting. Do you bake with it also?

We made these today. Tasty! I used 1/2 package of almond bark (vanilla flavored candy coating), about 12 oz. This worked well. The kids are happy. Score!

I made these on Sunday and everybody loves them. Did anybody else think they seemed stale the next day? I used a brand new box of Rice Chex (bought that day) so my gluten-free hubby could enjoy them. I kept them in a ziploc bag, too. I’m not sure why they went stale so quickly :(

I agree, these go stale fast. I don’t think it has anything to do with the freshness of the ingredients…… muddy buddies do this too. I think it’s the melted butter. I suggestion making the batch within a couple of hours of when you’re going to serve them. So disappointed too cause I wanted to give these out as gifts.
