Taco Quesadillas

One of the things I love about making quesadillas is how easy they are to change up just buy using different ingredients for the filling.

We often make just cheese quesadillas or even cheese and bean ones, sometimes we even add bacon to them. But one of our favorite quesadillas to make are taco quesadillas. They were so simple and so good. They are also a great way to use up leftover taco meat or to turn one meal into two. Double your taco ingredients and you can easily serve tacos one night and taco quesadillas the next.

All I do for these is take basic taco ingredients and spread them on tortilla shells. Then I cook them like I would a quesadilla. We dip them in salsa and guacamole, but you can also eat them as is.

You really do not need exact measurements for this. I make these with flour tortillas, corn tortillas, and our favorite gluten free tortillas. Just use whatever ingredients you have.

  1. One of our favorites is corn, cheese, black beans and a diced tomatoes with chilis. Yum! I butter both sides of the tortilla and the turn out nice and crispy. We also like to serve with salsa, guacamole and sour cream. One of our favorite easy meals! Gonna make it for lunch today actually!

  2. I started making taco quesadillas a while back so that my hubby could more easily take taco leftovers to work for lunch. For dinner we’ll have traditional tacos and then I make a few quesadillas with the meat and cheese for his lunch. Assembling a taco at your desk is a bit messy, but a taco quesadilla is a one-handed delight.

  4. I have 6 in. corn tortillas. Would these work? Tortillas seem to come in so many different sizes when it comes to the flour ones, but I prefer the corn tortillas which I can only find in 6 in. (Ezekial brand). I also wonder if these same corn tortillas would work for your enchiladas?

  5. Taco Quesadallis oh what a great idea. Think this week will cook beans and
    have them. I have a quesadallis maker love it it is so fast and easy.
