We love Mexican and Tex-Mex type dinners, but you probably know that by now. We also love quick and easy, but again I think you know that by now.

So, let’s just get to this recipe for Skillet Tamale Pie.

This is quick, easy, and delicious. And it won’t break the budget to make. Serve it with a salad on the side and you have an easy and delicious meal that your whole family will love.

  4. This looks yummy. I hope to make it tonight! By cornmeal do you mean the cornbread mixes or do you mean ground corn? I know that sounds crazy but so many people actually mean the mixes and I don’t use those. ๐Ÿ™‚

    • I mean cornmeal, like you would use in homemade cornbread. I am with you, I don’t use cornbread mix. Most recipes I saw like this called for a mix, so I came up with one that was made with a homemade cornbread batter. If you have a favorite cornbread you could also just use that batter. I hope you enjoy it.

  6. When I make Skillet Tamale Pie I add one can of corn, with liquid, and some black olives. I also stir the cornmeal into the filling, with some shredded cheese, and top with more shredded cheese. Yum!!!!!
