Skillet Tamale Pie

We love Mexican and Tex-Mex type dinners, but you probably know that by now. We also love quick and easy, but again I think you know that by now.

So, let’s just get to this recipe for Skillet Tamale Pie.

This is quick, easy, and delicious. And it won’t break the budget to make. Serve it with a salad on the side and you have an easy and delicious meal that your whole family will love.

Skillet Tamale Pie

  • 2 tablespoons oil
  • 1 onion, finely chopped
  • 1 package of taco seasoning or use homemade taco seasoning
  • 1 pound ground beef
  • 1- 15 ounce can black beans, rinsed and drained
  • 1- 14.5 ounce can diced tomatoes
  • 2 1/4 cups cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 1/4 cup vegetable oil
  • 2 large eggs
  1. In a large deep oven proof skillet brown ground beef with onion until beef is done and onion is tender.
  2. Add taco seasoning, black beans, and tomatoes to meat. Stir well to combine.Set aside.
  3. In a bowl combine cornmeal, baking powder, baking soda, and salt in large bowl. Whisk in buttermilk, 1/4 cup oil, and eggs until combined.
  4. Spread batter over meat mixture in skillet.
  5. Bake at 425 for 25-30 minutes or until cornbread tests done. 
Note: If you do not have an oven proof skillet or one that is large enough, cook the meat part on the stove and then place it in a casserole dish for the oven.

      Yes, it is. Just be sure to use gf or homemade taco seasoning. I also use gluten free cornmeal for mine.

    This looks yummy. I hope to make it tonight! By cornmeal do you mean the cornbread mixes or do you mean ground corn? I know that sounds crazy but so many people actually mean the mixes and I don’t use those. 🙂

      I mean cornmeal, like you would use in homemade cornbread. I am with you, I don’t use cornbread mix. Most recipes I saw like this called for a mix, so I came up with one that was made with a homemade cornbread batter. If you have a favorite cornbread you could also just use that batter. I hope you enjoy it.

    When I make Skillet Tamale Pie I add one can of corn, with liquid, and some black olives. I also stir the cornmeal into the filling, with some shredded cheese, and top with more shredded cheese. Yum!!!!!
