It has been a few weeks since I shared a recipe for my Crock Pot Favorites Series. I had not planned on taking a break, but a kitchen remodel, a quick trip to Oregon, and life in general got in the way. I know this means I might not make it to over 50 recipes this year, but I can still get close. And hopefully we will not have any more breaks.
Today I am excited to be back sharing a simple crock pot chicken.
Several years ago I shared how I cook a whole chicken in the crock pot. It is so simple and is one of my favorite ways to cook chicken.
I recently got whole chicken on sale for a really good price. I bought a couple of them and decided that I wanted to cook them in the crock pot, but I wanted to flavor them up a little more than normal.
I have made lemon chicken in the oven many times, so I decided to take that same basic idea and cook it in the crock pot. It worked great. A few simple ingredients added so much flavor.
And I know a whole chicken cooked in the crock pot is not pretty, but it is really moist and delicious. Oh so very good!
- 1 lemon, cut into four pieces
- 1 onion cut into 4 wedges
- 2 tablespoons butter, softened
- 2 teaspoons seasoning salt
- 1 whole chicken
- Rinse chicken and pat dry.
- Remove neck and gizzards if your chicken contains them.
- Squeeze lemon slightly over chicken. Then place lemon slices inside chicken cavity.
- Place onion inside chicken cavity.
- Combine butter and seasoning salt and smear all over outside of the chicken. I use my hands to do this part.
- Place chicken in crock pot and cook on low about 6 hours. This may vary depending on the size of your chicken.
