Ingredients
- Bob’s Red Mill 1 to 1 Gluten Free Flour Blend
- cornstarch
- xanthan gum
- baking soda
- salt
- butter
- brown sugar
- sugar
- egg
- egg yolk
- vanilla
- gluten free white chocolate chocolate chips
- gluten free white chocolate
- macadamia nuts

Ingredients
- 2 cups Bob's Red Mill 1 to 1 Gluten Free Flour Blend
- 2 tablespoons cornstarch
- ½ teaspoon xanthan gum
- ½ tsp. baking soda
- ½ tsp. salt
- 12 tablespoons butter, melted
- 1 c. brown sugar
- ½ c. sugar
- 1 egg, plus 1 egg yolk
- 2 tsp. vanilla
- 1 cup gluten free white chocolate chips
- 4 ounce of gluten free white chocolate bar cut into chunks ( I used Ghirardelli)
- 1 cup chopped macadamia nuts
Instructions
- Preheat oven to 325. In a bowl mix the first five ingredients and set them aside.
- In another mixing bowl, combine butter and sugars until well blended. Add egg, yolk, and vanilla and mix well.
- Add dry ingredients until blended.
- Stir in white chocolate and macadamia nuts.
- Scoop in ¼ cup balls onto a cookie sheet. I use an ice cream scoop. Place six on each cookie sheet. You should only place 6 per sheet because these are large cookies and they spread out.
- Bake for about 12-14 minutes or until edges are slightly browned.
