What’s For Dinner Tonight August

It is time for another What’s For Dinner Tonight. I am so glad that readers are excited that I am bringing these posts back.

If you are a newer reader What’s For Dinner Tonight is where I share an occasional post that is a real-life look into my kitchen. I share photos that are not staged. They are pictures of the real food that I am making and serving my family.

This is one of my favorite easy meals when I don’t feel like cooking or I don’t have a lot of time to cook dinner.

I usually call this Crock Pot Mexican chicken because that is basically what it is.

I make this in slightly different ways, but they are all the same basic idea.

Boneless skinless chicken, salsa, and seasoning cooking in the crock pot until done. I shred it and serve it.

It works great served as tacos, taco salad, burrito bowls like pictured above, in enchiladas and more.

The leftovers also freeze great. I love to stock my freezer with cooked chicken like this. It makes for an easy dinner on a busy day.

I used some of the chicken to make enchiladas. When I make enchiladas I make two pans. One gluten free for me and one with regular tortillas for my husband and son.

Enchiladas are another great freezer meal. So make extra and put a pan in the freezer to use later in the month.

I know that peach season is pretty much over in most areas, but I made peach pie bars recently so I wanted to mention them.

Several years ago I shared the recipe for regular peach pie bars and for gluten free peach pie bars. They are one of my favorite desserts to make during the summer.

I have taken these to potlucks, picnics, Bible study and more. Everyone loves them.

It was hot one day and I had been gone shopping and running errands most of the day so I picked up chicken salad at Costco.

I thought about getting a rotisserie chicken, but my husband and son are kind of tired of Costco chicken. The chicken salad makes a nice change from their chicken.

We had this for dinner one night and ate the leftovers for lunch for two days. Chicken is cheaper, but $11 is still pretty cheap for a dinner and several lunches.

I had a night where I wasn’t feeling well so I looked in the freezer to see what I had. I bought these several months ago and it seemed like a good time to use them up.

We enjoyed both of these. I think the Alid egg rolls were a special buy because I have not seen them since I bought them in May. I really wish Aldi carried more gluten free items all year long. Too often I buy something I like in May and then never see it again.

I took out ground beef from the freezer one night and then did not feel like cooking what I had planned.

Instead, I decided to make my cheeseburger casserole, but since it was hot I did not bake it. I just stirred in the cheese and we ate it like sloppy joes on buns and gluten free bread.

I decided that I wanted to stock the freezer with a few things that would make meals easier when I wasn’t feeling well.

I took out about eight pounds of ground beef from the freezer.

I cooked it up, unseasoned. Sometimes I add onions and peppers or taco seasoning, but this time I wanted to be able to use it in more ways so I left it unseasoned.

I drained the fat off, let it cool, and placed it in ziptop bags for the freezer.

Having this in the freezer will make tacos, casseroles, sloppy joes, soups, etc. much easier.

I also took out some ground pork and deer sausage from the freezer.

I formed it into patties and my husband cooked it on the grill. If you have never grilled sausage you need to try it. It is the easiest and least messy way to cook it.

I had planned to put some of the sausage in the freezer, but we ended up eating it for dinner one night. My husband and son ended up using the rest for several breakfasts and lunches.

Since it has been crazy hot here in Oklahoma, the menu plan hasn’t been going as planned.

One night I just made sandwiches, but I wanted them to be a little better than a basic sandwich.

I had a few hamburger buns that needed to be used up so I put them in the oven long enough to melt some cheese on them.

I put turkey lunch meat and garden fresh tomatoes on top of the cheese. It was an easy and delicious summer dinner.

On another day when it was over 100 degrees with a heat index over 115 degrees, I made what my husband calls fake bbq.

It is crock pot bbq chicken. It is not fancy, but it is an easy dinner for any time of the year.

I am also expirementing with air fryer salmon. I almost have the recipe ready to share. I love salmon, so it has been fun to work on this recipe.
