30 Days Gluten Free Candies and Cookies

Today for 30 Days of Gluten Free Candies and Cookies I am sharing a favorite cookie of mine. This is a childhood favorite that I converted to gluten free. It is one of those recipes that my mom made all the time when I was a kid. We ate this not only during the holidays, but all year long.

One of the things I love about this gluten free ranger cookie recipe is how easy it is to change up. You can make them with chocolate chips, white chocolate chips, or a combination of both. And these are another one of those recipes that no one will know is gluten free. They taste just like the original version.

My family recipe says to use crushed peppermint candy in the recipe. The coconut, oatmeal and peppermint is a combination that we really liked.
