Lemon Curd

I love lemon desserts. If I can’t have a chocolate dessert, I will pick a lemon dessert.

If you ask my mom or sisters what I would always want for my birthday cake as a kid, they will tell you lemon.

I would usually choose pound cake with lemon pudding or lemon curd. It was my favorite way to eat cake as a kid. My mom would make a  pound cake and then we would eat it with hot lemon pudding or curd spooned over the top. I still love to eat it this way.

I love lemon pudding and for many things, it works well, but in some cases, lemon curd works better. Lemon curd sets up thicker and makes a perfect filling for a layer cake. It also works well served warm over pound cake or even my hot milk cake.

This is my favorite homemade lemon curd to make. I will say though that it is lemony, but lemon curd is supposed to be lemony.

Has anyone else ever had hot lemon pudding or curd served over cake? Or is this just a strange thing my family does?

Yield: 6 servings

Lemon Curd

Lemon curd is easy and delicious to make at home.

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Ingredients

  • 1 cup fresh lemon juice
  • 1 1/3 cups sugar
  • 4 large eggs
  • 3/4 cup plus 2 tablespoon butter, cut into tablespoon pieces

Instructions

    1. Whisk together lemon juice, sugar, eggs, and a pinch of salt in a 2-quart saucepan.
    2. Add the butter all at once and cook over moderately low heat, whisking constantly, until curd is thick enough to hold marks of whisk and first bubbles appear on the surface, this takes about 10 minutes.
    3. Immediately pour curd through a fine sieve into a bowl, then chill, covered until serving..

    YUM!! Lemon desserts are my absolute favorite, and I’ve been known to eat lemon curd straight from the jar. I definitely have to make this. That might be dangerous, though. I might eat it all at once. 🙂

    I love anything lemon!! I first discovered it as a kid in lemon merangue pie. I’ve recently taken to making my own lemon yogurt. Does this mean (like me) you like key lime pie? I recently stumbled onto a food blog in which they made the infamous lemon bars with lime juice…neat twist, don’tcha think?

    I love love love lemon desserts also. I just might have to make this now to go on top of a angel food cake, yum.

    I love lemon too! We used to have a Macaroni Grill and my favorite dessert was their lemon cake. Oh my word was that good. Looks like a great recipe. Thanks!

    My favorite bakery cake as a kid was lemon cheese cake. It was simply a moist white cake “frosted and filled” with lemon curd. Absolutely devine! The cake is sweet and the tangy lemon is a perfect combination.

    I lovelovelove lemon desserts – I think it only comes second to cinnamon for me.

    Last year when my daughter’s birthday cake fell just before her birthday party, I broke it into pieces and layered it with homemade lemon curd, whipped cream and raspberry preserves in a trifle dish, and stuck candles in the top of her “birthday trifle”! It was delicious.

    thanks for the recipe, Lynn. My family loves lemon pudding too. Our traditional birthday cake is white cake with lemon pudding as the filling between the layers. And, we’d always fight over who got to eat the leftover warm pudding!

      @melissa stover, Thanks! Joy @fivejs did my site design a few months ago and used some of my photos for the side buttons. She did a great job on it and I love the look it gave the categories. It was great meeting you at Blissdom. I wish we had more time to talk photography. Blogging has made me really start to enjoy photography.
