Beef Enchilada Soup

Now that the holidays are over, I am ready for things to get back to normal in the kitchen. I feel like I spent way to much time in the kitchen. Not only that, I used way too much sugar, chocolate, and butter during the month December.

My goal for the month of January is to keep things in the kitchen simple and this recipe works perfect for that.

You can easily have this soup on the table in about 30 minutes. And this soup contains ingredients that most of us already have in our pantry.

There is nothing fancy about this meal, but it is a hearty bowl of soup that your whole family will love.

  9. I printed off this recipe and made it for my husband and I. We really enjoyed it. I will be putting this on our menu plan on a regular basis. This is easy and cheap to make but also tasty.
    I made it in a crock pot and did not put cheese in the soup itself but had cheese on the table to be added indiviually.

    • @Joy A., I am so glad that you liked this. I have thought of making it in the crockpot also, but had not tried it yet. I am glad to hear that it worked well. We love this soup and I am glad that you enjoy it too.
