Fresh Pineapple

Fresh pineapple is so good.

I did not realize how good fresh pineapple was until I was an adult. Growing up I never remember eating fresh pineapple. We always ate canned pineapple. It was cheap and readily available, so that is what we ate.

I am not sure exactly when I had my first fresh pineapple, but once I had it, canned pineapple was never the same again. Fresh pineapple is so much better.

We eat pineapple just about anytime, but one of our favorite ways to eat it is with Mexican food.

My friend who has given me several of my favorite Mexican recipes, like my enchilada sauce and my Huevos Rancheros, serves pineapple with Mexican type food all the time. She has served it this way several times when we have eaten at her house, and we really enjoyed it.

So often with Mexican food, it is hard to know what vegetable or side dish to serve. I have found that pineapple is almost always good served with it. The flavors go together really well.

    We love fresh pineapple here too!!! I think it has really only been cheap enough for the “regular” consumer in the last few years. I also supplement with cans because it has a longer storage capacity but you are right once you have the real macoy any other is in a distant second place…..Julie

    We love it here! I only recently started buying it the last couple years. All we ate as kids was canned as well. I either got some in our produce co-op or saw it for $0.99 at Aldi and decided to try it. Now I can’t even eat the canned kind!

    Whenever we grill chicken breasts, we like to put some pineapple slices on the grill as well. I also make chicken teriyaki kebobs w/ veggies and pineapple.

    I use canned pineapple for some recipes, and I buy the little plastic cups of pineapple chunks to have at work for quick snacks.

    We live on fresh pineapple during summer. It has just gone up in price as summer is over, but went down to 3 for R10 (around $1.20) (we live in South Africa where pineapples are grown and exported from), and those are the big Queen pineapples . We either eat it as a fruit snack or we roast it with a little brown sugar for about 20 minutes and have it for dessert with either yoghurt or icecream.

    I live less than 10 minutes from the Dole Plantation here on O’ahu, Hawaii. My kids adore taking trips up there (followed by shave ice on the North Shore…yum!). I’m a traditionalist with pineapple…I enjoy it it most just fresh and cut. I love the juice as a marinade ingredient for chicken. I enjoy it grilled. But my absolute favorite is just fresh and cold.

    I never thought to serve it with Mexican–great idea! I do struggle with a fruit/veggie for Mexican dishes (besides salsa! LOL) and I can see pineapple being a great side.

    I serve it with Mexican food also. I tend to like my Mexican flavors pretty spicy and so does most of my family, so pineapple is a really nice way to soothe the burn on our tongues throughout the meal. And I agree, it’s SO much better fresh than canned, but canned will do when that’s what the budget allows.

    I love fresh pineapple, but am hesitant to buy the whole pineapple because I afraid to cut it. Maybe you can make a video abou that. I hadn’t thought about serving it with Mexican food. Thanks for the idea!
