These slow cooked taco sloppy joes are a fun take on your classic sloppy joes recipe.
My family loves sloppy joes and I have shared several recipes over the years. We have always preferred the homemade kind. In fact, I don’t think my kids have ever had sloppy joes from a can. It has always been homemade for us.
Sloppy joes are one of my favorite meals because they are easy to make in a large batch and freeze. The meat filling freezes great and makes a simple dinner on a busy night.
I also like sloppy joes because the filling is easy to change up. You can serve it on regular hamburger buns or on gluten free hamburger buns or bread. My family also loves it on baked potatoes and even on pizza. Yes, sloppy joe pizza is delicious!
Today’s recipe for sloppy joes is fun because it is not your classic sloppy joe recipe. These sloppy joes have a fun mexican twist to them.
This recipe is adapted from a recipe I printed out from Betty Crocker a long time ago. Anyone else have a huge stack of recipes they print off and never get around to trying? Oh good it is not just me.
A few months ago I realized that my stack of recipes was out of hand. The pile was turning into multiple piles with no organization. I took some time to go through them. I organized them, threw out the ones I no longer wanted and made a stack to try right away. These slow cooked taco sloppy joes made it to the try right away pile.
I change up the recipe slightly, but used the same basic idea. We loved them. We ate them as sloppy joes the first night and then used the leftovers in taco shells. The leftovers worked great as a burrito type filling.
And please forgive the way the hamburger buns look in the picture. My son carried in the groceries for me and well let’s just say that he is not as careful as I am with the bags of groceries.
Maybe someday I will get him trained and the bag with the bread in it won’t be on the bottom of the stack and the chips won’t be smashed. I didn’t have any other hamburger buns, so I used what I had for the pictures. I am sure those of you with boys can totally relate to the whole carrying in the grocery bags thing.
A quick note to those that are gluten free the bun in the picture is not gluten free, but those in my family that eat gluten free just used a gluten free hamburger bun or bread. And be sure to read the labels on the enchilada sauce and taco seasoning. Some are gluten free and some are not.
- 3 pounds lean ground beef
- 1- 16 ounce can refried beans or 1 can pinto beans rinsed and drained
- 1- 10 ounce can enchilada sauce
- 1 package taco seasoning
- hamburger buns or gluten free hamburger buns
- 1/2 cup shredded cheese for serving
- In a skillet brown ground beef. Drain off any fat and place meat in slow cooker.
- Stir in beans, enchilada sauce, and taco seasoning. Stir until well combined.
- Cook on low for 4 hours.
- Serve over buns with shredded cheese.
