Freezing Taco Meat

March 25, 2008

I posted this last year but wanted to link to it for Life As Mom’s freezer meal receipe swap.

One of my favorite things to have in the freezer is taco meat. Here is the tip I learned from my sister about freezing taco meat.

If you add water to the meat when freezing it, more ice crystals form hurting the texture. Instead of using water, when adding the seasoning, use about 6 ounces of tomato sauce per pound of meat. Your meat will not freezer burn as fast.

I think I have used this idea so much because taco meat is one of the most versatile things I have found to freeze. You can use if for tacos, nachos, enchiladas, taco salad, and as a topping for potatoes.

I usually cook up about 5 pounds of ground beef and add four 8 ounce cans of tomato sauce with the taco seasonings. I let the meat cool and then freeze it in Ziploc bags.

Excellent tip! I usually just put the meat in there without the seasonings and such. Then when I need it I thaw it a little bit in the micro to be able to get it out of the ziploc and then put in a pan that has the seasoning, water and tomato sauce or soup ready to heat up everything for the meal. :)

I love having browned ground beef ready in the freezer. I will have to try it with the tomatoe paste. Thanks for the tip.

What a great idea! This is one I’m definitely going to use next time I freeze meat for tacos!

I use tomato sauce not paste. I think paste would be to thick but it may work.
