I have a new What’s For Dinner Tonight for you today. This month’s What’s For Dinner Tonight is all about fall meals.

If you are a new reader, my What’s For Dinner Tonight posts are are look into my kitchen life and the meals I am cooking and feeding my family.

These are the unstaged photos of everyday, meals. They are not social media-perfect images. Instead, they are a look at what we are actually eating for dinner.

I hope that you enjoy a look into what I have been cooking and feeding my family the last few weeks.

pancakes cooking on griddle

Breakfast for dinner is one of my favorite quick and easy dinners.

I recently took pictures to update a really old gluten free pancake recipe and I was reminded how much I love breakfast for dinner.

eggs, sweet potatoes, and sausage in pan on the stove

I was home by myself for dinner one night, so I turned leftovers into another breakfast for dinner.

I had a leftover cooked sweet potato that I cut up. I also had some ground breakfast sausage that needed to be used up. So I scrambled two eggs and mixed in the sweet potatoes and sausage.

It was an easy and delicious dinner for one!

sliced brisket and cheese on white plates on counter

My health has not been great the last two years and I had several rough weeks in September. I needed a couple of super easy dinners when the whole family was going to be eating together, so I picked up some sliced brisket at Sam’s Club.

I served it with sliced cheese, french fries, and fruit.

Sometimes we overthink meals. Frozen french fries and pre-bought meat is easy and a lot cheaper than eating out.

broccoli soup in a white pan on the stove

Martha Stewart’s broccoli soup is a new favorite quick and easy soup. This will be on the menu plan often this fall and winter.

eggs in an instant pot

We did not have hard boiled eggs for dinner, but I did make Instant Pot Boiled Eggs several times in the last two months.

I love to keep them on hand for breakfasts and lunches. My on also loves to make egg salad sandwiches with them.

three different kinds of meat in packages

Because of my health issues, I am back to doing more freezer cooking. One of my favorite meals to keep in the freezer is meatloaf.

You can freeze it cooked or uncooked. I prefer to freeze it cooked.

My tip for the best meatloaf is to use several different kinds of meat. My favorite ones to use are ground beef, ground venison, and ground pork.

meat loaf, fries, and roasted vegetables on stove

Meatloaf is not a fancy meal, but it is a great dinner paired with baked potatoes, mashed potatoes, or even french fries. This is my favorite meatloaf recipe.

rice, ground meat, onions and pepper on stove

Tacos, taco bowls, or taco salad are one of my favorite meals to serve when the whole family comes home for dinner.

I love to serve my Mexican rice and cheater refried beans when we make taco bowls or taco salad.

chicken, milk, chicken broth, onion, canned tomatoes next to a soup pot

I made Chicken Queso Soup one night and it was so good. I love soup for dinner during the fall and winter. It is an easy one-pot meal.

pumpkin chili in black bowl on white napkin

I recently made my pumpkin chili so that I could update the photos and I forgot how good it was.

sloppy joes in a pan on a stove

Sloppy Joes are one of my favorite everyday dinners to make. Kids and adults love them. Sloppy Joes also freeze great. You can freeze the filling and grab some hamburger buns or bread when you are ready to serve them.

I am working on a new recipe that I will share soon.

pumpkin muffins with pecans on black background

I will also be sharing the recipe for these gluten free pumpkin muffins soon! They are perfect for the fall and holidays.

I would love to hear what you have been cooking and feeding your family.
